Apple and berry crumble (GF)

This recipe came about on a winter’s Sunday evening that I was craving something warm and comforting for an evening in front of the fire! This was an experiment that went really well I’m glad to say as some of my gluten free baking experiments don’t go to plan :)

This is really easy to make, about 10 minutes prep and 30 mins approx in a preheated oven (180 degrees)

Recipe:

  • 200g gluten free flour (I used 100g buckwheat flour & 100g ground almonds)

  • 200g butter

  • 175g coconut sugar

  • 2tsp cinnamon

  • 450g of apples (I used granny smiths)

  • 1 cup of berries of choice ( I used blueberries)

  • Juice of 1 lemon

Method:

  • Cut and core the apples (peel if you want to, I don’t as I keep the skin for the fibre)

  • Mix the apples, blueberries, cinnamon and juice of 1 lemon in a bowl and pour into a pyrex dish.

  • Put the flour, sugar and butter in a bowl and rub together with your fingers until the mixture resembles breadcrumbs.

  • Place the mixture on top of the apples and place in the middle tray of your preheated oven (180 degrees).

  • Place some extra berries on top if you wish.

  • Takes 30 mins approx but all ovens differ - basically you want a golden crumble on top and soft apples underneath.
